3 -up family recipe
Preparation: 15-30 minutes Music: Hip Hop (kids choice) Cooking & Convo Question: Why is cooking with family important?
Ingredients 1 head of cauliflower chopped and cleaned 1 head of broccoli chopped and cleaned 2 carrots cut 1 inch slices and rinsed 2 gloves of garlic minced2. Teaspoon of black pepper2 teaspoons of salt2 tablespoons of Razzle Dazzle 1/4 cup of olive oil 2 cups Ice1 gallon storage/freezer bag
1. Boil 1 cup of salt water 2. Cut up all veggies and place in gallon freezer/storage bag.3. Sprinkle all dry ingredients/garlic and shake your bag (this is fun for the kids)4.add olive oil to bag and cover veggies by shaking.5. Place veggies in boiling water (water shouldn’t cover the veggies) 6. Allow water to boil, turn heat down and Cover for 10-15 minutes based on how you like your veggies... Don’t do them to long because they will be mashed veggies!! Oh you can add 2 tablespoons of butter if you just have to!!Enjoy REMIXING your veggies!! Remember this is a kid friendly recipe!!

Make the spice tea:
Boil 1.5 cups water, 2-3 cinnamon sticks, 3 star anise
Strain tea – add 1 cup tea to blender with:
(1) 11.25 ounce can sweeten condensed coconut milk OR (1) 15 ounce can of cream of coconut
(1) 12 ounce can of evaporated milk
(1) 13.5 ounce can of coconut milk
8-16 ounces coconut rum, depending on taste.
Dash of nutmeg
Blend well.
Serve on ice.

Originally from NYC, Queens. I Consider myself a nuyorican. A PuertoRican born and raised in NYC. My husband and I relocated our family to the Syracuse area in 2008.
What's your favorite thing about this dish?
My favorite thing about this dish is that it satisfies my Dominican husband's craving for tostones (twice fried plantains) and my love of quick and easy cooking. Mofongo goes with everything, breakfast, lunch and dinner.
Would you like to see more latin restaurants here inthe city?
I would love to see more puertorican or domincan restaurants in the city.
What are the health benefits from this dish?
The traditional way to make mofongo is to deep fry the pantians but to keep it lighter we air fry using way less oil.
What are 3 things you like to do outside of your work?
I am definitely a homebody so Outside of work you will find me at home, working on some new DIY project. If I had to pick three of my favorite things, I would say family game nights, DIY projects and listening to podcasts.

An affirmation I (try to) say to myself regularly in the morning is, " Today is a new day, today is a good day." And if I don't affirm it, I know my husband will if he sees me stressing in the morning rush. He's the morning person in the family. :)
